Within 48 hours of harvest, the olives undergo a cold extraction process at temperatures below 27°C, resulting in an intense green oil with golden highlights. This exquisite oil boasts a fruity aroma with subtle hints of almond, capturing all its delightful bitter nuances. The flavor profile is further intensified by a peppery finish, making it ideal for seasoning legume-based soups, white meat dishes, salads, and grilled vegetables.
